Spicy Chicken Rice Bowl


The other night I didn’t have much for dinner, so I started throwing together some things I did have and came up with this yummy dish. I was pleasantly surprised how good it turned out.


What you need:
Boneless Skinless chicken breasts
Brown rice
Franks Redhot
brown sugar

1. Cut chicken into cubes, toss in a skillet with salt and pepper. Fully cook then remove from skillet and set aside. While chicken is cooking, start your brown rice as it can take up to 25 minutes depending on the rice you purchased. There are microwavable kinds that only take a few minutes.

2.Place chopped veggies in skillet, I just did broccoli and carrots since its all I had on hand but you could do anything. Cook veggies until tender, don’t over cook.


3. While veggies are cooking get a small sauce pan out to start the spicy sauce. Turn on medium high heat. Put 6 tablespoons of Franks Redhot sauce (you can put a few more if you like it really spicy), 4 tablespoons of water. Once you the sauce he heated not boiling but close add 1 cup brown sugar. Whisk until brown sugar is dissolved. Once sauce it smooth remove from heat.


4. Once veggies are cooked place chicken back in skillet heat through.

5. Now take a serving bowl add your finished brown rice, just a few scoops. The add the chicken and veggie mixture on top of rice, and lastly add the spicy sauce over the top and serve.

You’ll Shoot You’re Eye Out……With A Nerf Gun

If you didn’t laugh at my title and get the reference, well shame on you. Just kidding, but seriously best movie. Anyway back to the real topic at hand. If you have kids it’s more than likely you have Nerf guns around the house or maybe your just a kid at heart.

Having boys we have always had enough Nerf Guns for a small army of children. Of course epic battles break out once and a while. It may start with just my husband and six year old then within minutes everyone is involved.

As adults we are always careful how we shoot at the kids but with each maybe not so much. I’ve taken a few to the head and they stinger like a mother f*****.

I got LASIK a few weeks ago so I have not been participating in the wars. As I am afraid of things hitting me in the eye, my eyes are still healing. My husband was having a battle with our 6 year old over the weekend. When I heard silence then my husband moaning in pain.

I called from the back asking if he was ok, no answer. So walked out to the living room to find my husband curled in a ball with his head in his hands still moaning in pain. After a few minutes he finally told me our son shot him right in the eye. He said he couldn’t see out his left eye everything was black.

I got him a cool rag to put on it and we waited for a bit to see if his vision returned. Finally after about 20 minutes he could see a little but it was very blurry. I checked his eye and there was no visible damage. About an hour went by he could see for the most part but there was a black shadow blocking some of his vision still in that eye. Of course being a man he didn’t want to go to a doctor. He wanted to wait and see.

The next morning it was the same still had the spot he couldn’t see. He went to work but still wanted to wait on being checked. I started self diagnosing on the internet (never a great idea) although what I found showed he could have a retinal tear or seperation. Not treated immediately could result in permanent vision loss.

After telling my husband this he called my eye doctor and they got him in asap. They checked him out and the doctor was shocked the damage the Nerf dart had done. He said he has only seem trauma like that from blunt force trauma. Luckily though no retinal damage. The spot he was seeing was a bruise. The doctor said it will be about 5 days before it goes away and he needs to go back in two weeks to ensure its healing properly.

So moral of the story always always make anyone playing with Nerf guns wear eye protection. I think we tend to think of our kids safety and make them and not our own. So no joke you really could lose an eye. And sorry Nerf company I will not be buying your fully automatic gun that shoots over 60mph, not only will someone probably lose an eye my entire house might get destroyed.

Quote of the Week #20


I was having a hard time picking a quote this week, but I decided since it is my birthday week and I’m dealing with getting another year older that this was a good quote.

When I look back at being young and how I imagined my life would be when I got older, it’s amazing how different you become from that person. Even my goals from being a teen to a young adult and now a mom and wife.

You definitely become more self aware and I think more confident because you understand what’s really important in life. In growing up I’ve definitely learned how important family is and having great friends. When your young its all about having friends but as you get older you realize its not about the amount of friends its the quality of the friendship.

When I was younger I swore I didn’t want kids and I wanted a career, well that’s not at all what happened. I think the teenage me would die of shock seeing how different we’ve become. I couldn’t be more satisfied with life, being a domesticated goddess and a mom.

Boy’s Bedroom Makeover


I’m behind on writing and I meant to blog about this sooner, but that’s ok it’s been a work in progress. My 6 year olds room has been an Avengers theme for the last three years and it was a banged up, colored on pastel yellow from when I first did his nursery.

As most parents know kids are so hard on everything. His room was in much need of a makeover. Then my son decided he wanted to move rooms and we just happened to have an empty room from his older brother moving out (long story there which I won’t get into).

So we started the remodel of the other room which also needed it bad, anyone who has a teenager knows they are just as hard on things and teenage boys make everything stink. So gross.

After I cleaned the room my 6 year old and I headed to our local hardware store to pick some paint. It’s important to me to let the kids have some say in there rooms, I like encouraging them to be creative. Of course at 6 he was going for some super crazy colors. So I gave him some samples of blues he could choose from.

Madman decided he wanted a bunk bed, so we had been looking around at furniture stores and the prices were so outrageous. So my husband being the handyman he is decided to make a loft bed for my son. My husband busted this out in a day and it only cost us $100. The little guy even helped his dad out.

My little guy also decided he wanted a Star Wars themed room as he is obsessed with all things Star Wars. So I’ve been on a mission to find decor and make that work. Again to my surprise the décor was really over priced for what it was, so the hunt was on for things to decorate but not break the bank.

I am obsessed with Target its my go to store for almost everything, I was there one day and passed by their dollar section and they had these great little Star Wars signs. They were perfect for the room and they were only a dollar!


My son got this massive ship for Christmas, we really had no idea where to put it and it didn’t do much so asked my husband if we could hang it so it looked like it was flying. Sure enough my husband had the perfect stuff to do it with and it turned out great! My son loved it so much.


I found some cute metal Star Wars letters at a local home décor store but again the price was crazy. So I decided to make my own. I went to Hobby Lobby and found some wood letters for $1.99 a piece and found some Star Wars scrapbook paper. I painted the letters black then mod podge the paper on them. I bought enough letters to spell out “Star Wars”,  they turned out perfect and saved myself money.


This is what we have so far, there are a few other little things I would like to add but one thing at a time. It’s been fun I love doing new home projects, now on to the next room!

Quote of the Week #19


This is a few days late but better late than never. I love this quote and feel its very accurate with how I feel about my husband. We have been through so much in the past 10 years but through it all its always made us stronger. I don’t think we could have made it through if we didn’t consider each as a friend, an equal, as well as a partner.

If you read my post from last week you know my husband and I tend to like simple date nights at home without the kids. So for Valentine’s Day we decided to do just that instead of dealing with the crowds that go out.

It actually kind of started from this text my husband sent me about a week ago, one I couldn’t stop laughing but two I thought hey that could be fun. Disclaimer if you’re offended sorry get over it.


So yes my husband built us our very own tent fort for Valentine’s, and I put together some appetizers and alcohol. We kicked back and watched a movie and I’ll leave it at that.

So hopefully you all had a fun Valentine’s I know I did, LOL.

I saw some friends posting and sharing this on Facebook the other day so I thought it would be fun to do as a blog post instead of just sharing it on Facebook. Since we are on the week of Valentine’s Day I thought why not?

We met at work, he got hired on at the company I worked at.

2. How long have you been with your significant other? 10 years

5. Do you have any children yet?
Yes, one son from my husband’s previous marriage and one 6 year old together.

6. What’s your favorite thing about your other half?
This is hard cause I love so much about him, I love his humor he can be the biggest dork sometimes but he always can make me laugh. I also love how hard working he is, a driven successful man is hot!

7. Were you and your other half high school sweethearts?
Nope that would have been gross, we are 8 1/2 years apart so you do the math.

8. Where was your first date?
At my husband’s house he invited me over for breakfast and a movie

9. How long were you dating before you said “I love you”?
2 weeks ( He said it first no matter what stories he tells now)

10. How long were you dating your other half before he/she proposed?
Well technically we were only together about 3 weeks when we decided to get married but he didn’t officially propose for 4 months because he wanted to do everything just right.

11. Where is your favorite place you have traveled with your other half?
Paris, France and Playa Del Carmen

12. How do you and your other half usually spend Valentines Day?
We order take out and have a candlelit picnic in our living room and watch a movie

13. What does your favorite ‘date night’ consist of?
I love a date night at home with no kids, we can watch something other than cartoons and I can drink all I want and not worry about having to drive home.

14. What is the best gift you have received from your other half?
Besides him, he bought my car for my birthday one year and tricked me into going down to the dealership were it was sitting brand new never driven with a giant red bow. The coolest thing ever!

Oh, the conversations with kids


As any parent knows, you get asked some awkward questions by your children as they are growing up. Mostly we get our selves into this situations and are unprepared how to answer our kids, especially when they pipe up and ask you about something you said thinking your child was not listening. Yes this has happened a time or two in our house, and my husband and I usually manage to change the subject very quickly. Unless of course its something that truly needs to be explained.

Recently my son has been asking for a sibling, he really wants a little sister. We have told him a few times that unfortunately we will not be having any more kids. He brought it up again recently and asked me if I could get a baby in my tummy he really wants a little brother or sister. Well here is how the conversation went.

Me: sorry I can’t have any more babies
Madman: so how come you could only make one baby?
Me: well the things that make a baby don’t work anymore.(Really at this point I should have sent it over to my husband since its his parts that are no longer in service but I didn’t think I wanted to get to detailed on the birds and the bees yet)
Madman: what parts? Are there wires inside you? So you cut the blue wire and had me? Then there were no more wires?
Me: yes exactly no more wires (At this point I am trying not to die laughing at how he is explaining it)
Madman: so is there a pink wire for the girl you can cut?
Me: ah, no there’s no more
Madman: can I see? Where are the wires? Are they in your butt?

At his point I can barely compose myself from what my son has just said so I passed it off to my husband and told him to take over. He just said sorry there are no more wires and there won’t be anymore babies and my son just dropped it after that. What the heck? Why did I get the inquisition and not my husband? Oh well it was quite amusing but it definitely makes me scared to have to the sex talk with my son. I think I’ll leave that one to my husband when the time comes.
